Crustless Pumpkin Pie

A delicious Pumpkin Pie that is Gluten Free with a crunchy pecan topping that is so good, you won't even miss the crust.

I based this recipe off of a crustless coconut pie recipe that I have. It is all mixed up in a blender and then poured into a pie dish, making it really easy to make and even easier to clean up.
Crustless Pumpkin Pie with Pecan Crumble
Ingredients
Pie ingredients:
1 can of pumpkin
1 can of full fat coconut milk
1/3 cup of melted butter*
1/3 cup of maple syrup
2/3 cup of coconut sugar
1/2 cup gluten free flour (I use Bob's 1 to 1)
4 large eggs, room temperature
1 tsp of pure vanilla extract or vanilla paste
1 tsp of baking powder
1/2 tsp of salt (I use Celtic Salt for everything)
2 tsp of pumpkin pie spice
1 tsp of cinnamon
Pecan Crumble Topping ingredients:
1 cup of chopped pecans
2 Tbls of melted butter*
1-2 Tbls of coconut sugar
1/2 tsp of cinnamon
1/4 tsp of chipotle chili powder (I always like to add a little bit of spice!)
Dash of Salt
Directions
Preheat oven to 375°F get out a glass or ceramic deep dish pie plate.
Add all of the pie ingredients to a blender and blend well until everything is completely combined.
Pour the pie filling into the pie plate and add to the preheated oven. Bake for 20 minutes.
While pie is baking make the crumble topping. Melt butter in a microwave safe bowl and add all of the other ingredients, stir to combine.
After the pie has baked for 20 minutes, carefully take the pie out of the oven and sprinkle the crumble mixture on top. Return pie to the oven and bake for another 20 minutes.
Remove pie from the oven and let cool completely on the counter, then cover the pie and transfer to the fridge and cool for 1-2 hours or overnight.
Serve with whipped cream sweetened with a little maple syrup.
* This pie can be made dairy free by substituting coconut oil for the butter.
